My Go-To Banana Nut Bread

It’s been a while since I’ve shared a recipe here—and that’s no bueno. Cooking and baking are such a big part of my everyday life, and I hope to capture more of that. I'm starting with something simple, cozy, and absolutely worth sharing.

This banana nut bread came together on a whim, using what I had on hand (including 2½ very ripe bananas and a generous handful of pecans). What I didn’t expect was just how good it would turn out. Soft, moist, perfectly sweet, with that buttery crunch on top—it’s easily one of the best loaves I’ve made.


Ingredients:

  • 2½ ripe bananas, mashed

  • ½ cup melted butter

  • ¾ cup sugar

  • 1 egg

  • 1 tsp vanilla

  • 1 tbsp baking powder

  • Pinch of salt

  • 1 tsp cinnamon

  • 1½ cups flour

  • ½ cup pecans

Directions: Preheat oven to 350°F and grease a loaf pan. Mash bananas, then mix in melted butter, sugar, egg, and vanilla. Stir in baking soda, salt, and cinnamon. Add flour and mix until just combined, then fold in pecans. Pour into pan and bake for 40–50 minutes, until a toothpick comes out clean.
